Turn stove to medium. Pour in light beer, add chopped onions, peppers, and pepperoni. Cook for 2 minutes, stirring occasionally.
Stir in tomato paste, parmesan, salt, pepper, oregano and chili flakes. Turn burner to low and let cook for 5 minutes, while stirring occasionally.
While sauce is cooking, prep rolls by cutting them open lengthwise. Pull string cheese apart and add 1/2 to the bottom of the roll - saving the other half for the topping.
Check to make sure vegetables are soft and cooked through. When sauce is ready, scoop 1/4 of pizza filling into each roll. Then top with the remaining string cheese, and a sprinkle of parmesan. Enjoy!
